2011: the beginning of the beginning
We are celebrating, we are turning 10!
We turn 10 this year, and we have always believed that it is essential to observe the past, to look at the future. That’s why we want to review our decade of life, through a series of articles. Today we publish the first one, 2011: the beginning of the beginning.
The year 2011 was a special year for all of us, after several months of refurbishing of the property that existed before BonAmb, we decided to carry out the first great challenge of BonAmb: to open in the middle of the summer high season. On July 26th, 2011, we opened to the public with less than ten team members, but with all the enthusiasm and ambition in the world.
From the beginning we knew that respect for the gastronomic culture of the Marina Alta, the work with local artisans and producers and the care of the product, was paramount for us. But we also wanted to send our way of interpreting this gastronomic tradition of Jávea to the tables, always attending to the preferences of our diners, to make ourselves known.
On November 21, 2011, Arrop, Nerua and Ramón Freixa restaurants got 3 Repsol Suns. And on November 24 of that year, 2 Michelin Stars were awarded to the restaurants Àbac, El Club Allard and Diverxo.
For our part, we started with a restaurant renovated to the detail. In the dining room we built a beautiful bodega with a menu that we had been filling with important references throughout all these years, starting at the opening with relevant bodegas such as Vega Sicilia, Contador, Azpilicueta, Ondarre, Finca La Colina, etc. …
And as for the kitchen, from the new and shiny facilities came dishes such as beef taco, roasted suckling pig, tiramisu of foie gras, etc. … short process elaborations, but already from the beginning aiming for the best product and a delicate treatment.
